A word about genetics

There are a few major classifications of cacao beans that are used to help define their genetic history and used to infer their quality (Criollo, Trinitario, Forestero). Within the Criollo, Trinitario, and Forestero beans, the are many wonderfully flavored beans, so don’t use these labels to prejudge any chocolate. You have to taste the chocolate to know.
